EPTFE Fermentation Air Lock Valve For Kimchi Sauerkraut & Pickle Jar Lids
The ePTFE fermentation air lock valve for kimchi, sauerkraut, and pickle jar lids is a passive, one-way degassing component that creates the ideal anaerobic fermentation environment inside a sealed jar, while automatically releasing the carbon dioxide gas produced by lactic acid bacteria. This valve integrates a food-grade ePTFE waterproof breathable membrane with a flexible, food-grade silicone umbrella or diaphragm check valve, housed in a compact body that fits into a grommet in the jar lid. During the active fermentation phase, as the beneficial bacteria consume sugars and produce CO₂, the valve opens at a very low pressure to vent the excess gas. This prevents the dangerous pressure buildup that can cause sealed jars to crack or explode. Critically, the valve instantly reseals when pressure equalizes, preventing the ingress of external oxygen, which would promote mold, yeast, and spoilage organisms. The ePTFE membrane provides a secondary liquid and particulate barrier, ensuring the sealing surface remains clean even in the presence of brine splashes or kraut particles. This valve enables the home and artisan fermenter to achieve consistent, safe, and successful fermentation results without the need for daily "burping" of jars.
Lactic acid fermentation is an ancient method of food preservation, now undergoing a major revival in home kitchens and artisan food businesses. Vegetables—cabbage for sauerkraut, napa cabbage and radish for kimchi, cucumbers for pickles—are submerged in a salt brine. Naturally present lactic acid bacteria multiply, converting sugars into lactic acid (which preserves the vegetables and gives them their tangy flavor) and carbon dioxide gas. In a sealed jar, the accumulating CO₂ can generate extreme pressure—enough to crack a glass jar, blow the lid off, or cause the jar to explode dangerously. The traditional solution is to "burp" the jar manually: open the lid once or twice a day to release the gas. This is labor-intensive, risks contaminating the ferment with airborne mold spores and bacteria each time, and introduces oxygen that can lead to surface mold, yeast growth (kahm yeast), and soft, mushy vegetables. A self-venting, one-way valve automates this process flawlessly.
The ePTFE fermentation air lock valve is the "set and forget" solution for anaerobic fermentation. The valve is installed into a grommet in the jar lid. Inside, a flexible silicone diaphragm rests against a precision seat, covered by the ePTFE membrane. As the fermentation produces CO₂, the internal pressure increases. When the pressure reaches the low cracking pressure (2-5 mbar), the diaphragm lifts, and the CO₂ passes through the ePTFE membrane and out of the valve. The membrane blocks any brine splashes or solid particles from reaching the diaphragm seal. Once the excess pressure is relieved, the diaphragm instantly reseals, forming an airtight barrier that prevents any oxygen from flowing back into the jar. The headspace inside the jar remains oxygen-free, favoring the anaerobic lactobacilli and inhibiting the aerobic spoilage organisms. The fermenter simply sets up the jar and lets the valve do the work for days or weeks.

The air lock valve is pushed into a pre-installed silicone grommet in the jar lid. The jar is filled with vegetables and brine, leaving the recommended headspace. The lid is tightened. As fermentation begins, the lactic acid bacteria produce CO₂. The internal pressure gradually rises. When the pressure reaches the valve's cracking pressure, the silicone diaphragm lifts off its seat. The CO₂ flows through the ePTFE membrane (which traps any brine or particles) and exits the valve. The pressure is relieved, the diaphragm reseals, and the oxygen-rich outside air is blocked. This cycle repeats automatically, hundreds or thousands of times, over the fermentation period. The result is a perfectly fermented product with no mold, no yeast, and the ideal texture and flavor.
